"Turkey Picatta"

You can do this with Turkey, Chicken or Veal if you are not opposed to such.

1/2 cup sifted flour
1/2 teaspoon basil leaves
1/2 teaspoon paprika
1lb fresh turkey breast slices ( or chix or veal)
1/4 cup, plus 2 teaspoons lemon juice
1/4 cup margarine or butter
1 cup fresh mushrooms
2 teaspoons (can alter to taste) capers in balsamic vinegar
1/2 cup water
1 teaspoon chicken instant bouillon

Combine flour, basil and paprika. Dip turkey in 1/4 cup real lemon juice, then in flour mixture. In a large skillet brown turkey in margarine 2 minutes on each side or until no longer pink inside. Remove from skillet, keep warm. Add mushrooms, capers, water, bouillon and remaining 2 teaspoons of real lemon juice- cook until mushroom are tender. Pour over turkey slices and garnish with Parsley.

Makes 4 servings - very easy to double as I do for our monthly whole family dinner.

Great side dish for Turkey Picatta

Rigatoni with Four Cheeses ( a bit time consuming but so worth it - if you do not have time for this you might try more traditional and easier Fettuccinni Alfredo or Pesto sauce)

3 cups milk
1 tablespoon chopped carrot
1 tablespoon chopped celery
1 tablespoon chopped onion
1 tablespoon chopped parsley
1/2 bay leaf
1/4 teaspoon black peppercorns
1/4 teaspoon hot pepper sauce
dash ground nutmeg
1/4 cup butter
1/4 cup flour
1/4 cup grated Wisconsin Romano cheese
12 ounces un-cooked rigatoni (cooked and drained)
1 1/2 cups shredded cheddar cheese
1 1/2 cups mozzarella cheese
1/4 teaspoon chili powder

Combine milk, carrot, celery, onion, parsley, bay leaf, hot pepper sauce, peppercorns and nutmeg in medium saucepan. Bring to a boil. Reduce heat to low and simmer 10 minutes. Strain and reserve milk.

Melt butter in another medium saucepan over medium heat. Stir in flour. Gradually stir in reserved milk. Cook, stirring constantly, until thickened. Remove from heat and add Parmesan, Romano cheeses stirring until blended well. Combine cheddar and mozzarella cheeses in medium bowl and blend in pasta.

Place 1/2 of the pasta mixture in buttered casserole dish. Sprinkle cheese over top. Place remaining pasta mix and cheese top with chili powder.

Bake in preheated oven at 350 oven for 25 minutes or until bubbly

Makes 6 servings

Fresh steamed broccoli or asparagus is always another nice addition for sides.
